VICTORIAN SPONGE CAKE

  • 3 eggs
  • 1 cup of sugar
  • 1 teaspoon vanilla essence
  • ½ cup of oil
  • ½ cup of boiling water
  • 1¼ cups of cake flour
  • 3 teaspoons of baking powder

Cream eggs, sugar and vanilla essence until light and fluffy.
Combine oil and boiling water and mix into your egg mixture.
Add sifted cake flour and baking powder a little at time and fold in.
Grease 2 ovenproof dishes. Pour mixture in and bake at 180°C for 15 to 20 minutes or till tested ready.
Sandwich with a layer of jam and whipped cream. Dust with icing sugar.
Whipped cream made using 250ml fresh cream and a tablespoon of sugar.
