VEGGIE QUICHE WITH SWEET POTATO CRUST
- 2 medium sweet potatoes
- olive oil
- coconut oil
- 1 red onion, sliced
- 1 white onion, sliced
- 1 large baby marrow, sliced in rounds
- 2 grated carrots
- ½ punnet mushrooms, chopped
- 1 packet baby spinach, chopped
- salt and pepper to taste
- 5 eggs
- ½ tin of coconut milk
Cut sweet potatoes into thin rounds, drizzle with olive oil, season.
Line an oven dish with sweet potatoes, bake in a preheated oven until soft at 180ºC ± 30 min.
Brown the red and white onions in coconut oil, add baby marrow, grated carrots, mushrooms, baby spinach.
Season with salt and pepper, fry for 5 minutes.
Beat the eggs and coconut milk together and add to veggies.
Pour veggie mix into sweet potato crust, bake until egg mixture is set (about 20 minutes).
