VEGETABLE CAKE
- 370 g grated baby marrow
- 150 g grated carrots
- 140 g grated onion
- 130 g grated potato
- 80 g (1 cup) of your favourite grated cheese
- 5 eggs, lightly beaten
- 90 g (¾ cup) flour
- 1 teaspoon dried parsley
- 2 teaspoons dried basil
- ¼ teaspoon chili powder
- large pinch salt
Preheat oven to 180 ºC.
Grease a 20 x 20 cm dish.
In large bowl mix the vegetables together then add the cheese, eggs and seasonings.
Finally fold in the flour.
Pour into prepared dish and bake 30 – 40 minutes until golden brown and firm in the centre.
Keep checking it after 30 minutes.
Let cool slightly and serve with a salad.
