VANILLA CAKE WITH BUTTERCREAM ICING
- 4 eggs
- ¾ cup of sugar
- 1 teaspoon vanilla essence
- ½ cup of oil
- ½ cup of boiling water
- 1 ½ cups of cake flour
- 3 teaspoons of baking powder
Cream eggs, sugar and vanilla essence until light and fluffy.
Combine oil and boiling water mixture and fold into your egg mixture.
Add sifted cake flour and baking powder a little at time and fold in.
Grease a bunt pan. Pour mixture in and bake at 180ºC for 20 – 25 minutes
- Topped with butter cream icing:
- 100 g of butter
- 200 g of icing sugar
- 2 tablespoons of full cream milk
- a drop of pink food coloring, optional
Put the butter into your mixer and beat very well, add the icing sugar little by little while the mixer is running, beat very well.
Add the milk spoon by spoon till the texture is right.
Add the coloring and mix very well.
