BUTTERNUT, FETA AND SPINACH BAKE
- 1 butternut, skinned and cut into small chunks
- 6 large spinach leaves, washed and cut into pieces
- 1 round of Feta cheese
- 1 teaspoon dry thyme
- 3 tablespoons fresh chives, chopped
- 2 cloves garlic, crushed
- 1 cup cream or milk
- 1 egg
- salt and pepper
- 1 tablespoon butter
Boil the butternut until half cooked.
Put spinach for 5 minutes into salted boiling water and drain very well.
Mix butternut and spinach and place in an ovenproof dish.
Crumble the feta cheese on top and sprinkle with thyme, chives and garlic.
Mix together the cream / milk, egg, salt and pepper and pour over the butternut.
Dot with the butter.
Bake in the oven for 30 minutes at 180°C.
Serve warm.
