Lunch at my house today was Turkish flatbread and saucy chicken.

  • Flatbread:
  • 2¼ cups all purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 3 tablespoons vegetable oil
  • 160 ml warm milk
  • 160 ml warm water
  • 2 tablespoons instant yeast

Combine all ingredients and make into a soft dough.  Leave to rest for 2 hours.
Divide into 8 portions.
Roll out each portion to the size of a small plate.
Toast in a dry hot pan.
Spread butter as soon as it is finished.

  • Chicken:
  • 1 Chicken cut into 8 portions
  • 1 tablespoon garlic
  • 1 teaspoon salt
  • 1 tablespoon crushed chillies
  • 1 tablespoon coriander powder
  • 1 tablespoon cumin powder
  • 1 teaspoon black pepper
  • 4 tablespoons all purpose flour
  • 2 tablespoons cornflour

Mix the spices and flours  and sprinkle on the chicken pieces.  Mix wel that the meat is covered all over.
Deep fry the chicken in vegetable oil till golden brown and done.  Remove chicken from the oil and keep aside till all the pieces is done.

  • Sauce:
  • 1 curry leaf
  • jalapeños to taste
  • 3 tablespoons butter
  • 1 cup chilli sauce of preference

Fry the curry leaf and jalapeños in the butter add the chilli sauce and mix the sauce.
Add the fried chicken to the sauce and serve immediately.
