TUNA SALAD L’ADORE
My dad passed this recipe on to me many years ago.
- 250 g shell noodles
- 100 ml oil
- 100 ml white vinegar
- 10 ml sugar
- 5 ml mustard powder
- 1 clove garlic, crushed
- salt and pepper
- 2 tins of tuna in brine
- 1 can of anchovy fillets
- 1 packet of black olives, pitted and sliced
- 25 ml mayonnaise
- 2 tomatoes
- 4 hard boiled eggs
- spring onions
Cook noodles till al dente.
Mix oil, vinegar, sugar, mustard, garlic, salt and pepper, pour over warm noodles.
Slice tomatoes and add to the noodles.
Add tuna (without the brine), olives, anchovies, spring onions and mayonnaise and mix.
Add sliced eggs, don’t mix again.
Allow to cool in fridge.
