TROPICAL COLESLAW WITH MANGO
Tropical coleslaw with mango served with grilled chicken. Utterly delicious on a warm evening.
- ½ a small red cabbage, thinly sliced
- ½a green pepper, thinly sliced
- 2 small baby marrows, spiral cut
- 1 medium carrot, spiral cut
- 1 large mango, cut into cubes
- 1 small red onion, thinly sliced
Arrange all the ingredients in a salad bowl or on the plates and drizzle with the salad dressing.
Dressing made with equal quantities of rice vinegar, honey, lime juice, soya.
I only used about 20 ml of each to drizzle over the coleslaw.
You can use a bit of avocado or olive oil to give it a nice glossy shine.
