SUPER FAST AND EASY SCONES
No kneading, no rolling out of dough, no cutting into circles – you bake them in a muffin tin! This is super easy and delicious.

2 cups (500 ml) blending flour

4 teaspoon (20 ml) baking powder

½ teaspoon (2.5 ml) salt (Omit if using bacon as extra)

¼ cup (62.5 ml) oil

1 x-large egg

1½ cup milk (I used 2% milk) so I only used milk, but if you prefer you can use a mixture of 1 cup milk and ½ cup water

Option 1:

¼ cup of bacon bits

½ cup of sharp shredded cheese

OR:

Option 2:

¾ cup Safari (SA Brand) cake fruit mix, but you can use any dry cake mix. It should not be the sticky one with syrup!
Preferably use a silicon mold as this will be easier to remove the scones.
I tried various options and will only recommend a silicon mold as the scones do stick to cupcake paper casings.
I have not tested this but am sure it will work if you liberally use spray and cook or a non-stick product in a regular muffin pan.
Mix the dry ingredients together in a large bowl. (Add option 1, see notes)
Mix and blend the wet ingredients together.
Pour the wet ingredients on the dry ingredients and make sure to incorporate everything, with no white or dry flour spots. (Add option 2, see notes)
Use an ice cream scoop and cover with spray and cook or with oil, then scoop the dough and add to the silicon mold.
Or spoon batter into 12 cupcake wells (divide evenly)
Bake at 180°C / 350°F for approximately 20 – 30 minutes or until a toothpick or cake tester inserted in the middle comes out clean.
Check after 20 minutes.
I usually take it out once done, turn it over on a cooling rack and return it to the oven for another 5 minutes or so especially when using my silicon mold.
Concocted from my own previously made recipes but I am always playing around so wanted to try something slightly different this time and it worked out well.
If you do not use muffin liners, leave it in the pan to cool down slightly before you remove the scones.
As I used lines, I took it out and left it on a cooling tray.
Variations:
Option 1:
If you decide to use the bacon and cheese add them to the dry ingredients. (Omit the salt if using the bacon pieces)
OR-
Option 2:
If you decide to rather use the cake fruit mix, add it at the end, and make sure to distribute it evenly throughout the batter. For good measure (I love cake mix) I sprinkled some extra over the top of each muffin.
