STEAK AND BAKED POTATOES
Hi everyone! Just want to share what I made last night. Steak and baked potatoes. My family loved it!
- 3 large potatoes
- 3 tablespoons of olive oil
- salt and pepper
- 1 cup grated Cheddar cheese
- 1 cup creamed sweetcorn
- 9 rashers of streaky bacon
- 700 g porterhouse steak (between 3 and 4 cm thick)
- ½ cup brown sugar
- 1 cup soy sauce
- ½ cup Worcestershire sauce
- 3 tablespoons honey
- 2 teaspoons crushed garlic
- 5 ml mixed Italian herbs
- salt and black pepper
Pre-cook the potatoes in the microwave for five minutes. Then rub potatoes with olive oil, sprinkle with salt and bake at 160 °C (fan oven) for 30 minutes.
Let them cool down, cut the tops off and hollow out potatoes. Fill with the sweetcorn and grated cheese. Wrap streaky bacon around the outside, secure the bacon with toothpicks and bake again at 160 °C for 30 minutes.
Mix all the ingredients for the marinade together and marinade the steak for an hour. In a very hot pan (one that can also go into the oven), sear the steak on all four sides, especially making sure the fat side is seared properly. But be careful.
Make sure you remove as much of the marinade as you can.
The honey and sugar in the marinade will burn too quickly and taste bitter.
After all sides are seared take the pan off the heat and pour the reserved marinade over the steak. Put the steak into the oven at 160 °C for 12 – 15 minutes for medium rare.
