  • 25 g (125 ml) soft butter
  • 105 g (120 ml) castor sugar
  • 5 ml vanilla essence
  • 1 large egg
  • 280 g (500 ml) cake flour
  • 30 g (50 ml) cornflour (maizena)
  • 5 ml baking powder

Beat the butter and sugar until light, then beat in the vanilla and egg. keep aside.
Sift the cake flour, cornflour, baking powder and pinch of salt together.
Stir the flour mixture into the butter mixture to form a firm dough.
Refrigerate for 15 min or until firm.

Roll out the dough, press out the cookies, place on a prepared bake tray.
Bake for 8-10 min at 160ºC.
