SPICY CHICKEN CHEESEBALLS
Move over sausage balls, we have a new favorite in town, and it’s Spicy Chicken Cheeseballs!
- 3 cups all purpose baking mix (pancake mix works well)
- 450 g raw finely chopped chicken
- 2 tablespoons Tapatio Salsa Picante hot sauce
- 4 cups sharp cheddar cheese, shredded
- ½ cup milk
- ½ teaspoon oregano
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- dash of salt and pepper
Preheat oven to 180ºC, and line a large sheet pan with parchment paper.
In a large bowl combine all of your ingredients, and mix until they are just combined.
Form into 2 inch balls, and place on your lined sheet pan.
Bake for 20 to 25 minutes or until they are golden brown.

There is some information missing that could impact the outcome of this recipe. The baking mix to which the recipe refers is bisquix. I have made half the recipe using chorizo salami and it was far too dry. I had to add quite a bit of milk. It could be due to my use of a pancake (flapjack) recipe as my baking mix. Using bisquix may give a different result from what I will have.
