SODA WATER PASTRY

SODA WATER PASTRY

  • 500 ml (280 g) cake flour
  • 3 ml salt
  • 150 g cold butter
  • 60 ml ice-cold soda water
  • 5 ml fresh lemon juice or brandy

Sift flour and salt together.

Cut butter into small pieces (OR grate the butter straight out of the fridge) and rub into flour with fingertips until mixture resembles fine breadcrumbs.
Combine soda water and lemon juice. Add to dry ingredients and cut in with a knife.
Knead lightly to a firm pastry.
Cover with plastic wrap and refrigerate for at least 30 minutes.
Roll out pastry on a lightly floured surface to a thickness of about 3 mm.

Use as instructed in chosen recipe. The pastry is usually baked in a preheated oven at 200 °C for about 20 minutes, or until golden brown.

Made this Apple Strudel with the soda water pastry. I basically cooked up 6 Granny Smith apples and added sugar and cinnamon to taste. When the mixture is completely cooled, spoon onto the rolled out pastry and shape as required. Bake as per the recipe instructions.
