SODA BREAD

This is a recipe for a quick and easy Soda Bread from the well known, talented and very attractive Paul Hollywood 😊

  • 250 g whole wheat flour
  • 250 g cake flour
  • 1 teaspoon bicarb of soda
  • 1 teaspoon salt
  • 420 ml buttermilk

In a large bowl, mix together the two types of flour, bicarb of soda and salt.
Add the buttermilk and mix until a sticky dough forms, with one hand or a wooden spoon.
Lightly flour a work surface and tip the dough onto it.
Gently roll and fold the dough a couple of times to bring the mixture together. Do not knead.
Shape the dough into a ball. Flatten the ball gently with your hand. Score the dough with a deep cross dividing it into quarters. Dust the bread with flour.

Set the load aside for 30 minutes, this will allow the bicarb of soda to start to work.
Preheat the oven to 200°C.
Place the loaf onto a baking tray lined with baking parchment and bake for 30 minutes on the middle shelf of the oven. The loaf should be golden-brown and sound hallow when tapped on the bottom.
Leave to cool on a wire rack.

For variety; add 200 g finely grated cheddar cheese and some fresh chopped rosemary.
This is best eaten on the day of baking but can keep for a day or two in a bag in the bread bin.
