SHANS STUFFED CHICKEN BREASTS

  • 3 chicken breast, or more depending for how many you cooking
  • 1 cup of chopped green onions/spring onions
  • 1 clove crushed garlic
  • 1 cup dice bacon preferably without fat
  • 4 teaspoons chicken braai spice
  • 5 pieces fresh thyme
  • 4 tablespoons honey
  • 4 tablespoons sesame seeds
  • 1 cup of sesame oil
  • 1 cup sundried tomatoes
  • 1 cup of cream
  • 1 chilli, optional

Fry garlic, onions, bacon and chilli in a pan with 1 tablespoon of sesame oil, and 2 teaspoons braai spice for 3 minutes and then add chicken braai spice and set aside.
Flatten the chicken breasts with a meat mallet or a rolling pin, not too thin though.
Spread all the cream over on only one side of the chicken.
Place the fresh thyme on top.
Then add the green onion, bacon, garlic and chilli filling.
Top with chopped sundried tomatoes.
Roll it up and keep it together using toothpicks.
Wrap chicken breast separately in foil and grill on 200°C for 10 minutes.
After 10 min remove foil and place chicken breasts aside.
Remove any sauce from your grill dish, optional.
Place chicken breast back in dish.
Cover with the rest of the sesame oil, sprinkle with sesame seed and the rest of the braai spice.
Grill on 250°C for another 8 – 10 min, watch that it don’t burn.
Then add the honey and place the dish back in the oven for another 3 – 5 min.
