SESAME CUCUMBER SALAD
“‘n Verfrissende, anderste komkommer slaai as die gewone.”
- 1 large cucumber, thinly sliced
- ¼ teaspoon salt
- 3 tablespoons (45 ml) rice vinegar
- 1 tablespoon (15 ml) sesame oil
- 1 tablespoon (15 ml) soy sauce
- 1 teaspoon maple syrup (or sugar)
- 1 teaspoon toasted sesame seeds
Slice the cucumber very thinly with a mandolin or a knife.
Place the cucumber in a sieve over a bowl and sprinkle lightly with salt.
Let it sit for five minutes, then gently squeeze out any excess water with your hands.
In a bowl, combine the remaining ingredients and whisk together.
Add the salted cucumber and toss together.
Serve cold.
