SAUSAGE AND POTATO SKILLET DISH

Realy quick supper.

  • 6 pork sausages, skins removed and chopped
  • 1 tablespoon butter
  • 3 potatoes, peeled and cubed
  • 1 onion, thinly sliced
  • pinch of mixed herbs
  • ¼ teaspoon smoked paprika, optional
  • 1 tablespoon tomatoes paste mixed with 1 tablespoon water
  • sugar to taste

Boil potatoes (pref in microwave) till soft, but not falling apart. Drain and set aside
Fry onions till golden and soft.
Fry sausage pieces till browned, and drain some of the fat off if it is too much.
Add drained potatoes, and cook together for about 5 mins to allow the flavors to mingle.
Add herbs and spices, and finally the tomato paste and adjust acidity to taste.
Red peppers, chillies, mushrooms and garlic can also be added if you want.
Serve with salad, crusty bread and fried eggs.
