SARIE’S MICROWAVE FRUITCAKE

500 g fruit cake mix

1 cup brown sugar (Demerara)

1 packet of dates
-
250 g butter
-
1 cup of water (250 ml)

1 teaspoon bicarbonate of soda
-
¼ cup of water (mix with bicarbonate of soda)

1 cup mix nuts (250 ml)

250 ml mixed glace cherries
-
250 ml brandy
-
1 to 2 teaspoon ginger
-
1 teaspoon mixed spice
-
2 tablespoon apricot jam
-
2 large eggs
-
2 cups cake flour
-
pinch of salt
Place quality wrap waxed paper at the bottom of the microwave cake bowl.
Soak fruit overnight (250 ml brandy, cake mix, glace cherries and nuts).
Stove:
Boil fruit mix with 1 cup water, 250 g butter, 1 cup brown sugar and dates for 10 minutes plate heat 3.
Dissolve carbonate of soda in ¼ cup of water and add to warm fruit mix.
Leave to cool for 30 minute to 1 hour.
Add mix spices, ginger, apricot jam, eggs beaten, and cake flour.
Mixed well together, spoon in a microwave cake pan and bake on 100% in microwave for 25 minutes.
Cool off in cake pan and viola nice microwave fruit cake in only 25 minutes.
