SANDY’s ONION, CHEESE AND POTATO BALLS
- breadcrumbs
- 2 onions, chopped and fried
- 4 large potatoes
- 1 (or 2) cups grated cheese
- 1 egg
- 1 bunch spinach, blanched, drained VERY well and chopped
- 3 heaped tablespoons cornflour (Maizena)
- salt and pepper
- spices of your choice
- chilli, optional
Cook potatoes until soft, mash and refrigerate.
Fry onions until golden.
Put all the ingredients in a bowl and mix well.
Form small balls.
Coat in breadcrumbs and refrigerate until COLD.
Fry in batches in hot oil until golden brown.
