SALTED PEANUT BUTTER CARAMEL POPCORN 

  • 80 ml honey
  • 3 tablespoons dark brown sugar
  • 1 teaspoon vanilla extract
  • 3 tablespoon peanut butter (or use macadamia nut butter)
  • sprinkling of sea salt
  • 2 ½ cups popcorn
  • 1⁄2 cup peanuts (if using salted, don’t add salt to sauce)

Place the honey and brown sugar in a saucepan.
Bring to a simmer and allow the sugar to melt.
Stir in the vanilla extract and peanut butter and salt.
Preheat the oven to 180°C.
Mix the popcorn and peanuts together in a large bowl and pour the melted peanut sauce over.
Toss to coat.
Place on the baking tray and bake for 5 – 10 minutes.
Remove and allow to cool slightly before serving.
