SAKKIE’S OXTAIL
- 1 – 1½ kg oxtail, chopped into pieces
- 2 medium onions, sliced into rings
- 1 banana
- 2 bay leaves
- 60 ml brown vinegar
- 20 ml tomato sauce
- 20 ml chutney
- 20 ml honey
- 7 ml mild curry powder
- 7 ml salt
- 1 ml pepper
- garlic and sprinkling of cloves optional – I’d add this, though
Rinse the meat and put in a pressure cooker with the onions, banana and bay leaves.
Mix the remaining ingredients and pour over (no water is added – you may want to check though).
Heat slowly and cook under pressure for about 1½ hours (or more) over low heat.
Notes:
Can be done in slow cooker – pot roast and cook long and slow basically all day.
Brown meat and onions well, then do rest in slow cooker.
Nota:
Ek braai die uie en beesstert natuurlik bruin voordat ek dit drukkook, maar dit word in elk geval bruin in die stoof drukkoker. Ek het myne 45 minute gekook, en dit was heerlik sag.
