RUSKS WITH SEEDS AND MACADAMIA NUTS

En met al die beskuit bak vir die seuns het ek ook lus geraak! Ek het jare gelede n low carb beskuit resep gemaak en dit was nie lekker nie…maar met bietjie meer kennis (hopelik!) het ek die resep uit verskillende resepte saamgestel-en ek kan eerlik waar sê dat die ene regtig lekker is. En dis heeltemal diabeties vriendelik ook. Keto and low Carb.

  • Dry ingredients:
  • 250 ml almond flour
  • 250 ml sunflower flour (use almond or macadamia flour if you don’t have)
  • 1 tablespoon coconut flour
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • pinch of salt
  • 12 5 ml allulose (or your preferred sweetener to taste-if using xylitol/erythritol I would use about 2 tablespoon)
  • 100 ml each sunflower and pumpkin seeds
  • 8 – 10 macadamia nuts, chopped
  • ½ tablespoon goji berries, optional*
  • Wet ingredients:
  • 100 ml full fat Greek yoghurt
  • 25 ml cream
  • 1 egg

Mix the dry ingredients well, and add the wet ingredients. Mix well.
Ladle the batter into a loaf tin, lined with baking paper and sprayed with oil (it should fill it about half way).
Bake for 30 – 40 minutes until cooked through.
Let it cool down totally, then cut into slices and then fingers.
Dry overnight at 80°C (it will darken a bit) and when its dry let it cool down thoroughly.
Store in an air-tight container.
