ROASTED BUTTERNUT WITH PRESERVED FIG SYRUP
- 1 medium butternut, peeled and cubed
- 150 ml preserved fig syrup
- oil to coat for roasting
Roast the butternut cubes at 180°C until they are nearly done.
Drizzle the syrup over and roast until you can press a fork through the butternut.
If the edges are not going brown yet put under the grill for a few minutes but keep eye on it as the sticky syrup can burn easily.
