RAISIN SCONES
- 80 g butter
- ¼ cup of castor sugar
- pinch of salt
- 4 teaspoons of baking powder
- 2 cups of cake flour
- 1 cup of raisins
- 1 egg for mixture
- 1 egg for brushing
- 1 cup of buttermilk
Sift all dry ingredients together. Add raisins and mix through.
Grate butter and mix with flour.
Make a mixture of egg and buttermilk and add to flour mix.
Make a soft dough, adding more flour if necessary.
Break off small pieces and lightly roll with the palm of your hand.
Place on a prepared baking tray, brush with a beaten egg and bake at 190°C for 12 minutes.
Note:
Can be baked perfectly in an air fryer oven. I baked these at 190°C for 9 minutes.
