QUICK MINESTRONE SOUP FOR ONE
- ½ tin tomatoes
- 2 baby marrows
- ½ piece leek
- cauliflower to required taste
- 1 celery stick
- 2 tablespoons drained tin beans
- 1 ½ cup chicken stock
- ½ glove of garlic
- 1 teaspoon sugar
- salt to taste
Chop the vegetables to bite size.
Place all the ingredients in a pot or saucepan on the stove and cook for 10 minutes on medium heat.
Garnish with pickled jalapeño (optional).
