QUICK AND EASY SPINACH LASAGNE
- 1 packet frozen chopped spinach, thawed & drained
- 1 box Oven Ready lasagna noodles
- 2 – 14 oz spaghetti sauce (4 cheese blend)
- 500 ml cottage cheese or ricotta cheese
- 4 cups mozzarella cheese, shredded
Preheat oven to 350ºF (180ºC). Spray the bottom of 9 x 13 pan.
In medium bowl, mix together cottage cheese, spinach and 1 cup of the mozzarella cheese.
Pour a bit of sauce over the bottom of pan.
Lay down 3 noodles and layer cottage cheese/spinach mixture over noodles. Pour a bit of sauce over all.
Repeat noodle layer, cheese and sauce three more times.
Pour the rest of mozzarella cheese evenly over the top.
Place tin foil tightly over the top.
Note:
I put a separate cookie sheet lined with tin foil under the pan to catch any drippings.
Bake for 70 min or until noodles are tender.
