POTATO CAKES LATKES
Crunchy edges, golden crispy, simply delicious.
- 4 large potatoes
- 1 medium onion
- 1 teaspoon salt
- 2 eggs
- 8 tablespoons cake flour
- ½ teaspoon of baking powder
- oil for frying (normal cooking oil)
In large bowl grate potatoes and onion.
Press all water out.
Add salt.
Add the eggs and mix well.
Add baking powder and mix well.
Add the flour and mix well you might have to add more flour or add less flour depends on the size of your potatoes.
Heat oil in frying pan.
Add spoons full of potato mixture and fry until golden brown on both sides, and watch that it does not burn.
