PORK PIE WITH CHORIZO
First time making it from scratch and added my own little twist. I am so chuffed.
- Crust:
- 250 g lard
- 900 g cake flour
- 300 ml very hot water
Combine into soft firm dough. Leave to rest.
- Filling:
- 1 large onion
- 1 teaspoon garlic
- ½ teaspoon thyme and sage
- pepper to taste
- 1 chorizo sausage
- 500 g pork mince
- 1 egg, beaten to brush with
Chop onion and garlic in small pieces. Take skin of the chorizo and cut into pieces.
Fry onion and garlic a little bit, add chorizo and mince, cook till nicely browned.
Prepare a pie dish with cook and spray.
Divide the dough in two.
Roll 1 portion dough out and place in deep pie dish. Try not to have any holes in dough.
Add mince mixture and pack tightly.
Roll out the second portion of dough, cover the pie and seal.
Make a few holes in the top dough to let steam out and decorate.
Brush with egg.
Bake at 180 – 200°C for ± 45 min or until golden brown.
