POOR MAN’S SOUP

So called when you’ve run out of ingredients like 4 in 1 beans, soup vegetables and so on. Unfortunately today I didn’t make vetkoek – ran out of those ingredients as well.

  • 4 large carrots
  • 5 large potatoes
  • 1 to 2 cups rice, optional
  • ±3 liters of water maybe more, depending on pot size
  • 1 large piece chicken or any other meat of your choice, optional
  • spices of choice
  • stock of choice
  • soup powder of choice
  • some flour, for thickening

I like my soup vegetables grated. Grate the carrots and potatoes and add to a large pot.
Add 1 – 2 cups rice to the vegetables.
Add enough water to cover the above ingredients and let it boil (I used previously boiled water from the kettle)
Add salt and spices to your taste.
Add the chicken or meat of your choice (mincemeat, sausage, soya mince) or omit if you do not have any meat.
The chicken can also be precooked and then added to the soup.
Add more water if needed.
Stir the soup regularly. Let it boil or simmer for approximately 1 – 2 hours until the rice, chicken or meat is cooked.
Taste the soup and add more spices or stock blocks if needed.
Soup powder can be added for some extra flavor for example minestrone, brown onion or cream of mushroom.
I use about a tablespoon of each, put it in a cup of cold water stir well and add it to soup while stirring.
The soup can now be thickened with flour if necessary.
Put about 2 tablespoons of flour in a cup of cold water. Stir well as not to leave lumps. Add the flour mixture to to the soup and stir to prevent lumps.
Simmer for 10 – 15 minutes while stirring occasionally.
