PINEAPPLE PICKLE

PINEAPPLE PICKLE

  • Mix together and leave aside:
  • 5 pineapples cut and cubed
  • 2 teaspoon salt
  • 1 tablespoon coriander powder
  • 1 tablespoon cumin powder
  • 1 teaspoon cinnamon powder
  • 1 tablespoon crushed chillies
  • Boil the following for 2 minutes on the stove:
  • 1 cup of oil
  • a hand full of curry leaves,
  • 1 tablespoon of mustard seeds
  • 1 tablespoon of garlic

Cool and add to your pineapple mixture.

  • Bring  the following to boil stirring continuously until thick:
  • 1 cup of sugar
  • 2 cups of white vinegar and
  • ½ cup of corn flour

Add to the pineapple mixture and mix well.
You can serve it as a side dish or bottle it.
Note:
Its like a sauce. Something on the side. Goes well with curries or roasts.
