PINEAPPLE PICKLE
- Mix together and leave aside:
- 5 pineapples cut and cubed
- 2 teaspoon salt
- 1 tablespoon coriander powder
- 1 tablespoon cumin powder
- 1 teaspoon cinnamon powder
- 1 tablespoon crushed chillies
- Boil the following for 2 minutes on the stove:
- 1 cup of oil
- a hand full of curry leaves,
- 1 tablespoon of mustard seeds
- 1 tablespoon of garlic
Cool and add to your pineapple mixture.
- Bring the following to boil stirring continuously until thick:
- 1 cup of sugar
- 2 cups of white vinegar and
- ½ cup of corn flour
Add to the pineapple mixture and mix well.
You can serve it as a side dish or bottle it.
Note:
Its like a sauce. Something on the side. Goes well with curries or roasts.
