PIES WITH LEFT OVER CHICKEN CURRY
Who also makes pies with left-over chicken curry? I just use ready dough, and voila! Lunch for tomorrow.
- 1 roll ready dough
- Chicken curry:
- 1 rotisserie chicken, deboned and cut in cubes
- oil for frying
- 1 large chopped onion
- 2 tablespoons curry of choice
- ¼ teaspoon chopped garlic
- 2 tablespoons apricot jam
- 3 tablespoons Ketchup
- 1 cup chicken broth
- 1 cup frozen mixed vegetables
Stir fry onion and garlic in oil in a large frying pan for couple minutes.
Add curry and stir fry for a minute.
Add chicken, mix well, and fry for couple minutes.
Add jam and ketchup and stir well.
Add broth and vegetable and simmer for 15 minutes.
Add some corn starch if mixture is too runny.
Let mixture cool before making pies.
