PEANUT BUTTER BISCUITS
- 125 g butter or margarine, softened
- 100 sugar
- 90 g brown sugar
- 200 g cake flour, sifted
- 2 ml salt
- 5 ml vanilla essence
- 125 ml peanut butter
- 3 ml bicarbonate of soda
- 1 egg, beaten
Cream butter, peanut butter and sugars together until light and fluffy (use electric beater).
Gradually add flour, bicarb and salt, mix well.
Lastly add egg and vanilla essence, beat.
Roll into walnut sized balls, place apart on baking tray, flatten slightly with a fork, turn fork and flatten a little more to leave a criss-cross design on biscuits.
Bake for 12 to 15 minutes at 180 ºC or until golden brown.
Remove to cooking rack to cool.

I used Sandra Paterson Mason’s recipe she posted here yesterday. Made a single batch. Used my melon baller for measure and got 80 cookies.
