PAPAYA JAM
- 1.5 kg ripe papaya, peeled, seeded and chopped
- 1 cup 220 g firmly packed brown sugar
- 2 cinnamon sticks
- 2 whole star anise
- rind of 1 orange
Combine the papaya, sugar, cinnamon, star anise and orange rind with one cup (250 ml) in a large heavy based saucepan. Cook over medium heat stir every now and then until sugar is dissolves. Reduce heat to low and simmer uncovered for 50 minutes or until the mixture reduces and has a syrupy consistency. Spoon the jam into sterilised jars and seal while hot. Set aside to cool.
This is a Weight Watchers Receipt and you can eat 2 tablespoons and it is only 1 point.
I used half of this mixture and add a bit of chilly flakes to make it spicy and boiled it a bit further to eat with cold meats and it is very nice. So there you have two low calories goodies!! It is really very nice and I enjoyed it so much I am still eating it with cold meat!!

Ouens dit het afgekoel sodat ons daarvan kan eet en ordentlik proe en hy is ‘n rapsie te soet. Miskien is die pynappel baie soet maar ek gaan hom moreoggend ‘n bietjie dokter dat hy nie so soet moet wees nie. Stel voor jy proe jou pynappel as jy hom opsny en as hy baie soet is verminder die suiker ‘n bietjie!!
