PAO COM CHOURICO
“Pao com chourico – bread filled with chourico sausage. This is a bread that I usually buy when I go to the Portuguese Market. Yum!”
- 500 g cake flour
- 10 g instant yeast
- 2 tablespoons oil
- 1 teaspoon salt
- 1 teaspoon sugar
- about 300 ml warm water
- chourico sausage to taste, casing removed and sliced into thin slices
Mix flour and yeast well. Add salt, sugar and oil and start adding water until a knead-able dough is achieved. Knead for five minutes. Let rise in a lightly oiled bowl, covered for an hour in a warm place. It will double in size.
Knock down and divide into fist sized balls. Roll each ball out into a rectangle. Cover surface of rectangle with chourico slices, not overlapping. Roll up like you would a swiss roll, pinching the sides and closing off edges (all edges to the bottom).
Place on a baking sheet covered with baking paper and sprinkled with flour. Slice three skits into the top of each roll and sprinkle with a little more flour. Cover and let rise in a warm place for one hour. Bake in oven preheated to 180 °C for about 25 minutes until golden.
