OX KIDNEY IN GRAVY

  • 3 onions chopped and fried till just past golden brown
  • 1 ox kidney, chopped and white hard bit removed (not sure on the size of kidney)
  • salt and pepper to taste
  • 1 tablespoon of vinegar
  • 1 small pot of chicken stock or block

Fry the onions till nice and golden, will look like they will start to burn, then add chopped kidney and carry on frying, I fried in butter and not oil as we don’t really like using oil, but I guess you can.
Add your stock pot, spices and little water just to cover bottom of the pan to stop from sticking and to make gravy.
Lastly added the vinegar. No thickener needed as my sauce is thick enough.
Kidneys don’t need much cooking, just make sure you fry them nice and brown.
Served with pap.
