OVEN BAKED HAKE WITH LEMON BUTTER SAUCE
- 6 tablespoons lemon juice
- ½ cup of margarine
- ½ cup dry white wine
- 2 chopped chillies
- 2 tablespoons crushed garlic
- 1 tomato, sliced in quarters
- 1 onion, chopped
- 1 green onion stem chopped, leaves and stem
- 1 teaspoon basil pesto
- 1 tablespoon mixed herbs
- 4 hake portions
- salt and pepper to taste
- 1 teaspoon ginger spice
Spice fish with salt, pepper and ginger.
Smear oven dish with little bit of olive oil.
Bake fish at 200° C for 10 minutes.
Remove from oven.
While fish is baking, mix all other ingredients and saute on stove.
Pour over fish and add few tablespoons of butter.
Put back in oven until butter melts.
Enjoyed with toast.
