ONE POT CURRY AND RICE

The spirit of the dish, is that Zita doesn’t like too many dirty pots.

  • 500 g cubed meat (I cubed Kassler chops, it’s like thick-cut bacon, fat and all, really divine)
  • 1 red onion, chopped
  • 1 teaspoon crushed garlic
  • 2 tablespoons curry powder
  • 2 tablespoons turmeric
  • 1 teaspoon dried coriander
  • 5 tablespoons apricot jam
  • 4 tablespoons white wine vinegar
  • 1 cup Basmati rice
  • water
  • 250 g stir-fry vegetables (I used the French stir-fry mix with green beans, mushrooms, bell peppers)
  • salt and pepper to taste

Start off by frying the meat, onions and garlic for a couple of minutes in a pan with a little oil.
Add the curry, turmeric and coriander and let everything say hello to each other for ± 2 minutes.
Add the jam, vinegar and rice to the pot and stir to combine.
Add enough water to the mixture in the pot to cover the whole party, leave it on a medium heat and go have a glass of wine, 20 minutes or thereabouts.
After the water is absorbed and the rice is cooked, check the seasoning and add the vegetables.
Simmer the pot of rice, meat and vegetables for another 10 – 15 minutes until the vegetables are cooked to you liking.

Notes:
I didn’t put any type of meat in the title of the dish, because you can try this with whatever you feel like. As long as it’s cubed. If you’re vegetarian, use some meaty mushrooms.
