NO FUSS CHRISTMAS CAKE
- Boil the following ingredients together and allow it to cool down completely:
- 125 g butter
- 1 ½ cups of water
- 1 cup of sugar
- 2 cups fruit cake mix
- ½ cup of dates
- Add the following to the cold fruit mix:
- 2 cups of cake flour
- 1 teaspoon baking powder
- 2 eggs beaten
- 1 tablespoons mix spice
- 1 cup of pecan nuts, chopped
- 1 teaspoon vanilla essence
- 1 teaspoon orange essence
- 1 teaspoon lemon essence
- ½ cup of cherries, cut in halves or smaller
- extra:
- 1 cup of orange juice or brandy
Pour the batter into a cake tin or ovenproof glass dish.
Place a few cherries and nuts on top and bake at 180ºC for 30 to 35 minutes or test for doneness.
Pour the orange juice/ brandy over the hot cake once it’s baked.
Let it cool completely before you serve.
