NO FUSS CHRISTMAS CAKE

  • Boil the following ingredients together and allow it to cool down completely:
  • 125 g butter
  • 1 ½ cups of water
  • 1 cup of sugar
  • 2 cups fruit cake mix
  • ½ cup of dates
  • Add the following to the cold fruit mix:
  • 2 cups of cake flour
  • 1 teaspoon baking powder
  • 2 eggs beaten
  • 1 tablespoons mix spice
  • 1 cup of pecan nuts, chopped
  • 1 teaspoon vanilla essence
  • 1 teaspoon orange essence
  • 1 teaspoon lemon essence
  • ½ cup of cherries, cut in halves or smaller
  • extra:
  • 1 cup of orange juice or brandy
Pour the batter into a cake tin or ovenproof glass dish.
Place a few cherries and nuts on top and bake at 180ºC for 30 to 35 minutes or test for doneness.
Pour the orange juice/ brandy over the hot cake once it’s baked.
Let it cool completely before you serve.
