NO BAKE CHOCOLATE MOUSSE CAKE
- 50 g cherries
- 2 tablespoons dark rum
- 200 g dark chocolate (70%)
- 2 large eggs
- 2 egg yolks
- 100 g superfine, caster sugar
- 1 teaspoon vanilla extract
- 250 ml whipping cream
Line a 1 liter loaf tin with cling film.
Soak cherries in rum.
Melt chocolate in a heatproof bowl over a pan of simmering water. Allow to cool slightly.
Whisk together eggs, egg yolks, sugar and vanilla extract with an electric whisk until pale and thick.
Whisk melted chocolate in and whisk constantly for 3 minutes. Stir in rum soaked cherries.
Whisk cream until it forms light peaks, then fold it in lightly (with a spoon0 in chocolate until blended.
Pour into loaf tin. Cover with plastic wrap and freeze overnight.
Before serving, dip briefly into warm water, turn out and decorate with fruit.
