MUESLI COOKIES
- 250 g of cereal (muesli)
- 50 g of dried cranberries
- 50 g of raisins
- 50 g dried apricots, chopped into pieces
- 2 eggs
- 1 teaspoon baking powder
- 150 g of honey
- 50 g of butter
Preheat the oven to 175°C.
Mix the muesli, cranberries, raisins and apricots in a bowl.
Mix the eggs and the baking powder, add the muesli mixture, and mix through.
Heat the honey with the butter until the butter is melted and mix through the muesli.
Scoop the muesli mixture into the baking paper-coated baking pan (15 x 25 cm).
Flatten the mixture and bake for approximately 25 minutes in the middle of the oven.
Let cool in the pan and then cut into pieces.
Keep sealed in a container.
