MOZZARELLA CORN FRITTERS
- Mix together in a bowl:
- 1 tin of creamed corn
- 4 chopped spring onions
- 200 g of mozzarella blocks
- 100 g grated cheese
- 1 chopped chilli
- 30 ml chopped parsley
- 200 ml self raising flour
Fry spoonfuls of the dough in a shallow pan with hot oil, turning to brown each side.
Serve with sour cream and a salad.
Note:
Dough is quite runny, take care when frying and turning.
