MOZZARELLA CORN FRITTERS

MOZZARELLA CORN FRITTERS

  • Mix together in a bowl:
  • 1 tin of creamed corn
  • 4 chopped spring onions
  • 200 g of mozzarella blocks
  • 100 g grated cheese
  • 1 chopped chilli
  • 30 ml chopped parsley
  • 200 ml self raising flour

Fry spoonfuls of the dough in a shallow pan with hot oil, turning to brown each side.
Serve with sour cream and a salad.

Note:
Dough is quite runny, take care when frying and turning.
