MOTHER IN LAW’S FRUITCAKE

- Bring to boil and boil for ten minutes:
- 1,5 kg luxury fruit mix
- 3 cups sugar
- 375 g Stork baking margarine
- 4,5 cups water
- Take off the heat and add:
- 3 heaped teaspoons bicarbonate of soda
Make sure you have a big pot! It is going to bubble, let mixture cool down.
- Mix the following in with the fruit mix that cooled down:
- 6 cups cake flour
- 3 heaped teaspoons baking powder
- 6 eggs, room temperature
- 3 heaped teaspoons mixed spice
Spray 2 x 23 x 23 tins and divide mix between the two baking tins.
It will bake between 1.5 to 2 hours between 180 – 200°C depending on the stove you have.
I bake with gas so I bake at 200°C.
Cakes are done when pin comes out clean.
Leave in the tins to cool down, gently turn out and wrap.
I wrap in foil although there are people that use cling wrap.
I then put 60 ml brandy over ever two days for two weeks and then leave 2 weeks sealed to ripen.
