MICROWAVE EASTER FUDGE
- 125 g woodenspoon margarine
- 500 ml brown sugar
- 1 can condensed milk
- 10 ml lemon juice
- 2 marshmallow Easter eggs
Grease a pan, any size is good depending on how thick you want the blocks.
Cut marshmallow eggs into blocks and place in pan.
Microwave the margarine for 1 min in a deep dish.
Add the sugar and condensed milk and without stirring place back in the microwave for 1 min.
Stir with a wooden spoon or silicone spatula/palette knife.
Microwave for 10 mins and stir every three mins.
Add the lemon juice and stir until mixture thickens, should not take longer than 2 mins, if it does not thicken, place back in the microwave for another minute and stir until mixture thickens.
Pour or spoon into pan over marshmallow eggs.
Leave to cool and cut into blocks.
