  • 200 g butter
  • ¾ cup icing sugar
  • 1 cup plain baking cake flour
  • 1 cup cornflour / Maizena
  • ½ teaspoon baking powder
  • butter icing or jam to fill

Cream butter and icing sugar till light and fluffy.
Sift flour, cornflour/Maizena, baking powder together into the creamed mixture.
Mix well to a dough.
Roll dough into small balls and flatten with a fork.
Bake at 180 ºC for 10 to 20 min depends on the oven.
Cool and sandwich two biscuits together with butter icing or jam.
