MARBLED VANILLA CHOCOLATE COFFEE CAKE
- 250 g unsalted butter
- 200 g sugar
- 1 teaspoon vanilla essence
- 3 extra large eggs
- 3 level teaspoon baking powder
- pinch salt
- 330 g sifted cake flour
- 180 ml milk
- 4 tablespoon cacao powder
- ½ teaspoon coffee powder
Beat butter, sugar and vanilla essence until creamy. Add eggs one at a time, making sure to beat well after each egg. In another bowl mix flour, baking powder and salt. Add flour to butter-egg mixture alternatively with milk.
Divide mixture into two portions. In the one portion add cocoa powder and coffee and mix well.
Grease a baking tin well and add your mixtures alternatively one big spoon vanillamix and one big spoon coffee mixture in dollops to mable the in the cake. Carry on with the mable effect untill all the batter is in the baking tin,
Bake in oven 180°C for 35 – 40 mins.
Icing:
In a pot add 3 parts chocolate to one part fresh cream, 20 g butter and melt on low heat.
When cake is cold pour over cake.
