LOVELY POTATO AND LEEK SOUP
- 8 medium potatoes
- 4 bunches leeks
- 3 chicken stock blocks
- 1 pinch of salt
- 500 ml fresh cream
- 2 bunches spring onion
- 1 block Cheddar cheese
Peel and cut up potatoes. Add enough water to just cover the potatoes.
Boil potatoes. Slice leeks and add to potatoes. Add extra water and boil.
Crumble chicken stock into water.
Add a bit extra salt. Boil water till thickened and till potatoes are very soft.
Use hand blender to blend potatoes and leeks in the pot. Blend until soft and till completely no lumps.
Put stove on 1, bring to boil.
Add cream while stirring – make sure all cream is stirred in properly.
To serve:
Dish up soup in a bowl.
Add grated cheese and sliced spring onion on top.
Mix it together in the bowl and enjoy!!
French loaf slices goes well for dipping in the soup.
