LOVELY BACON, CHEESE, TOMATO AND ONION QUICHE
- 125 g ham or bacon, chopped
- 1 small onion, finely chopped
- 1 medium tomato, finely chopped
- 1 cup (120 g) grated tasty cheese
- ¼ cup (50 g) self-raising flour
- salt and freshly ground pepper / peri-peri, to season
- 4 eggs
- 1 cup (200 ml) milk
- Today puff pastry or your own
Preheat oven to 200°C. Grease a 5 cup capacity pie dish (medium).
Fry bacon and onions until golden brown. Let it cool off.
Combine ham / bacon, onion, cheese, flour, salt and pepper in a medium bowl.
Place unfrozen pastry in pie dish, making a couple of holes in the bottom with a fork.
Scatter pie filling over pastry in the base of the dish.
Whisk eggs and milk together in a jug and pour over ham mixture.
Bake for about 35 minutes or until puffed and golden at 180 ºC.
Serve warm or cold.
