LEMONY PASTRY PUFFS

A quick and very easy recipe as a sweet or savoury snack or desert.
As a savoury snack, just swap lemon and sugar filling with any desirable filling of your choice eg. Cream cheese and herbs or grated biltong… choices are endless… 😏

I used passion fruit jam.

  • Mix the following together and set aside:
  • 50 g sugar
  • zest of 1 lemon
  • 3 tablespoons of lemon juice
  • Extra:
  • 1 roll Puff Pastry, rolled out in rectangular square
  • 1 egg, beaten
  • icing sugar

Spread sugar/lemony mixture over pastry.
Start rolling pastry from the short end to the other, making sure edges come together.
Cut pastry roll into 5 cm wheels.
Now… take a wooden spoon with round handle, place in middle of wheel (open sides at edges- see photo.)
Press right down. Now with your fingers bring the middle where the spoon left a gap together and nip the edges of middle together.
Do the same with all wheels.
Place on a tray, sprayed with Spray and Cook, do not pack too close together leave some room to rise.
Brush pastry with the beaten egg.
Bake at 180ºC for 25 minutes until golden brown.
Dust with Icing sugar.
