LEMON PUDDING IN THE MICROWAVE
Use homemade or shop bought lemon curd) I also use more lemon curd, makes it more saucy.
- 60 ml lemon curd
- 100 g butter (soft)
- 100 g castor sugar
- 100 g self raising flour
- 25 ml full cream milk
- 2 XL eggs
- zest of 1 lemon
Use a microwaveable bowl (1 L capacity).
Place lemon curd in the base of the bowl.
Beat together rest of the ingredients and spoon over the lemon curd.
Micro uncovered for 3 – 4 min on High till cooked and risen.
Serve with fresh cream, vanilla ice cream or creme fraiche.
