LEMON MERINGUE ICE-CREAM

How about Lemon Meringue Ice-cream!? It is easy-peasy! Enjoy.

  • 1 can of condensed milk
  • 200 ml lemon juice
  • rind of 2 lemons, finely grated
  • 500 ml cream
  • Tennis biscuits, crushed and enough to cover the bottom of container
  • small meringues, for finishing and decoration

Mix condensed milk, lemon juice and rind. Whip cream until stiff and fold into mixture.
Compact crushed tennis biscuits at the bottom of the container; pour mixture over.
Freeze overnight or until hard.
Decorate with meringues.
